Seafood Gumbo

Seafood gumbo is one of my all time favorites! Great for dinner parties or a delicious meal for the family! Here are the ingredients you will need:

1 cup of Flour
1 cup of vegetable oil
3 qt seafood stock
Bell pepper
Chives
Onions
Celery
Okra
Garlic
Bay Leaves
Andouille pork sausage
Crab legs
Shrimp
Chicken
Tomato paste

Instructions:

1.) Cut chicken breasts into quarter inch cubes and cook, (either in the oven or in a skillet)

2.) Chop sausage into quarter inch cirlcles and sautee

3.) Pre-heat skillet to medium heat and pour your vegetable oil in, after it gets hot enough, have a wire wisk handy and wisk your flour in. Constantly stir until its milk chocolate brown, DO NOT leave the roux until it is done because it will burn within seconds! This will take about 20 minutes.

4.) When done, transfer the roux to your gumbo pot, add your veggies (bell pepper, chives, onions, celery okra, garlic, bay leaves) tomato paste and seafood stock. Give that a stir, let that combine and simmer for about 15 minutes

5.) Add seasonings

6.) Add your cooked chicken and sausage, give it a good stir and let it cook for about an hour

7.) Add your crab and shrimp, stir and let that cook for about 30 minutes

8.) Serve over white rice (or by itself) top it with a little parsley, serve and enjoy!
